Production Process:

• Roasting: The agave piñas are roasted for 72 hours in small 12-16 ton brick ovens, a traditional method that allows for a slow, even caramelization of the agave’s natural sugars.
• Extraction: Utilizing a traditional stone tahona and roller mill, the roasted agave is crushed, extracting the rich, sweet juice while retaining the fibrous agave fibers, which contribute to the complexity of the fermentation.
• Fermentation: The fermentation process is natural, with agave fibers present, fostering a full-bodied and richly flavored mosto ready for distillation.
