Thriving in the desert’s harsh conditions, only the strongest plants survive, storing natural energy without the use of herbicides, insecticides, or fertilizers. The piñas are roasted in volcanic rock-lined pits for 3 to 4 days, hand-crushed, and fermented in the open air for 4 to 8 days. Double distilled—first in a fire-fueled pot-still, then with gas—the spirit reaches 60-80% ABV before being proofed down and rested unfiltered for 60 days. Bottled at a robust yet approachable strength, this spirit captures the wild essence of the Chihuahuan Desert as of May 23, 2025.
