As an 18-year aged single blended rum, the Covenant Mark XXIII is a harmonious blend of artisanal pot and traditional twin-column Coffey distilled molasses rums. This combination brings together the richness and complexity of pot-distilled rum with the smoothness and purity of Coffey distilled rum, resulting in a profile that is both intricate and balanced.
The aging process, conducted entirely in ex-Bourbon barrels, imparts depth and character to the rum. Over the course of 18 years, the rum absorbs the nuanced flavors of the Bourbon-soaked wood, adding layers of vanilla, oak, and a subtle smokiness to the rum’s natural tropical and molasses notes.
